I just finished reading the ‘Glucose Revolution’ by Jessie Inchauspe. It refreshing new way of looking at what spikes blood sugar and contributes to fat being stored and increased weight. And it is based on personal experimentation and medical research.
It is making a switch in the order in which we eat the different foods, fiber, meat/protein, starches (pasta, rice, grains), fruits and sweets.
Eating foods in the correct order stops glucose/sugar flooding the bloodstream and ends up stored as fat, and the order is,
. Fibre first – vegetables of any type
. Protein & fat – meat, fish, dairy
. Starches – rice., grains, pasta, potatoes
. Fruits, sweets, desserts
Having vegetables, such as a small salad, some tomato, cucumber, fermented vegies, first, , to be followed by protein – meat, fish, chicken or fat, yoghurt, cheese, and then starches like potato, grains, rice, and then fruits or a dessert, chocolate, cake etc. slows down absorption, and keeps blood sugar steady.
Her book and website shows some very handy hacks that help manage glucose metabolism and helpful for weight management. For instance
. Vinegar of any type, my favourite Apple Cider vinegar with the mother, contains acetic acid enzyme that leads to more efficient uptake of glucose, reducing glucose spikes. This enzyme reduces the amount of insulin present, and gets he body into fat burning mode, telling your DNA to reprogram slightly so your mitochondria burns more fat. It helps slow down the effects of sweet and starchy food. This can be done by taking a tablespoon of vinegar in a glass of water within 20 mins. before, during and after having sweet and starchy food.
. 10 minute walk after a meal (within 70 mins) .or eating something sweet or starchy helps the body utilise glucose, and reduces any spike in blood sugar

I like the simplicity of this way of eating, you are not depriving yourself, and still helping to improve health outcomes including weight management.
